leaf=\"\">作为传统非遗项目，隆江猪脚的独特魅力源于对食材与工艺的极致追求。林远涛介绍，他们采用本地新鲜土猪的猪脚，相较于肉厚脂多的后蹄，前蹄肉质更为紧实，更受食客青睐。卤制前的处理工序丝毫不能含糊，先用火枪将猪脚上的粗毛细毛烧尽，再放入水中用钢丝球反复擦洗干净，随后按头圈、断轮、四点、蹄尾精确分切成四部分，焯水洗净后方可入卤。卤制时，先以大火将卤汁煮沸，1小时后转小火慢卤2～3小时，期间还需翻动猪脚2～3次，确保卤汁能渗透到每一寸肌理。卤制中，代代相传的老卤，是隆江猪脚的“灵魂”所在。依托这锅传承自父辈的老卤，林远涛仅添加酱油、盐、冰糖，其余香料和调料等一概不用，只为最大程度保留食材本味。</span></span></p><p
